#2 Tofu: The other white meat

I'm sure you are all familiar with white spongy substance known as tofu. Made from soy milk, tofu contains relatively high amounts of protein and (FunFact) the firmer the tofu, the more protein! Making it a great meat substitute for all you vegetarians out there.

The best thing is that it has little to no taste but takes on other flavors. Toss in some spices or add some marinade and the tofu magically soaks up the flavor like a sponge! Stir-fry is one of the more popular ways of cooking it but I like making tofu fajitas. Yum! Tofu comes in several types: [*Silken]- used more for desserts dishes while [*Firm] and [*Dried]-both of which are great because they bare a resemblance to meat when cooked. Don't be afraid try some today!

#1 Amazing Avocados

Starting off with the not-so-strange [Avocados]. Lately I have found myself craving these interesting little fruits. The avocado also know as the alligator pear because of its pear-like shape and the rough scaly texture of its skin. You can buy them at almost any grocery store for around $1.39 each, I usually get mine from Kroger. If you're lucky they may be on sale for $1.00!

Knowing how to tell when an avocado is ripe is key. The outside skin gets darker with time and the inside turns a beautiful bright green. Make sure to pick them up and feel them for yourself. If they're firm that's how you know its just right! If it feels soft and squishy... put it back or you may end up with a brown bruised avocado when you get home. :(

Don't let the 22 grams of fat scare you away from this "super food". They also have 14.7g of mono-saturated fat, 165mg of [Omega-3] fatty acids, and 2534mg of [Omega-6] fatty acids which are healthy fats.

They taste great in Salads, on sandwiches, in wraps and my favorite personal... Guacamole!

And we begin........

After recently becoming a vegetarian as of this Sunday I have realized there are so many new fruits, vegetables and other "different foods" out there that need to be rediscovered. In this blog I will post a new food of the day, a short bio on it, a picture and maybe a recipe or too. :) So enjoy!
